the following is a guide to the spices that are used throughout this book. Many of those listed are available widely (from supermarkets, delicatessens and gourmet food stores, for example), while for others you may have to seek out ethnic outlets (Indian, Middle Eastern or Asian food stores). Specialist suppliers are becoming established in some areas; these are the most likely of all outlets to stock a wide range of spices, including the less-common ones. Wherever you shop, make sure you choose somewhere with a high turnover to ensure freshness.
