Dry spice mixes do not contain moist or wet ingredients that would otherwise give them a limited shelf-life. Blended dried spices, raw or dry-roasted, can be prepared and stored in small quantities, although they are best made as you need them or as close to that time as possible to guarantee freshness and optimum flavour. Most of the Blends listed in this section can be bought already mixed for convenience, but if you are as driven by the flavour and aroma of freshly ground spices as I am, then these recipes will be invaluable to you as you roast, mix and concoct your own magical spice potions. (I think it’s quite possible that I would have been burnt at the stake had I lived in earlier times!)
