Soups are staples in every cuisine of the world and each includes a spice element in its make-up: this is what gives a soup its mysterious, elusive character. Rich and hearty or light and elegant, soups are comforting and endearing by their very nature. As a food source, they provide sustenance for the body and soul. the soups with the most fiery bite are those served in the tropical regions of the world — hot food causes the body to perspire, thus cooling it down. So don’t shy away from a laksa in the middle of an Australian summer — it is one of the best things you can eat (and it’s a great cure for a hangover!). With basic stock and spices to hand, soups are also among the easiest things to prepare quickly. Here I share with you the soups I use the most, at home and work, all with varying degrees of spiciness.
