Since their debut, many inside-out rolls have been created, and some have already become classics that are nearly universally available—California roll, spicy tuna roll, tempura roll, salmon skin roll, and caterpillar roll. The list continues to grow. Here I give you a collection of my favorite inside-out rolls.

The key to success in creating your own is selecting a well-matched, appealing combination of ingredients. A good rule is to choose ingredients of different colors, textures, flavors, and aromas, so that they harmonize and complement one another. Selecting the freshest and best-quality ingredients is no doubt the most important single element in the preparation.
