My wish to research all aspects of the sushi story compelled me to travel to many parts of Japan and the United States. During my investigations, I was privileged to meet with so many professionals—chefs, food and equipment producers, fishermen, fishmongers, distributors, and professors—who all contributed their precious time and enormous knowledge to this book.
