To run a busy restaurant takes diligence and a great deal of craftsmanship by all involved. Dedication is something we are very grateful to have found in those who work at The Bathers Pavilion, both now and in the past. You can’t ask for this. It only comes naturally to some from the love of what they do. We would like to thank them all for making possible this book and the continuing life of the restaurant. Most especially, we thank Ali Holmes, our second chef.

Kirsty Melville, our publisher, moved to America to join Ten Speed Press shortly after we agreed to do this book. Her negotiations for this move took place over lunch at Bathers, unbeknown to us. Without this lunch there would have been no book. Thank you, Kirsty.
