Keeping the turkey moist while it’s cooking is an important consideration. One way to ensure this is to baste the bird. This procedure—occasionally spooning liquid over the turkey—serves several purposes. It keeps the turkey skin moist and tender. It also can help the browning process.

Any number of liquids can be used for basting, but the most common is chicken or turkey stock. As the liquid runs off into the roasting pan, it blends with the rich pan drippings from the turkey. If you use a bulb baster, you can suck up this enriched stock and baste the turkey with it.
