Cooking fish is often much easier and faster than cooking meat. Use your local fishmonger, farmers’ market or fish counter at your supermarket for the best advice on the type of fish in season and the best way to cook it. For no extra cost, they should also fillet a whole fish for you, and prepare it so it’s ready to cook. They will also be able to advise on sustainable sources – sustainability is something you should be aware of as stocks of certain popular fish have been severely depleted by overfishing.
