Ukrainian salads are almost as diverse as the soups and can make an appearance at almost any stage of the meal. Heartier salads are often combinations of cooked vegetables, smoked meats, fish, or shredded duck or goose, and often accompany an entrée. But because such an enormous premium is placed on fresh vegetables, most times salads are simple, bound with a dollop of sour cream or mayonnaise (which Ukrainians love almost as much as sour cream), yogurt mixed with a splash of cream, or a mere drizzle of vinegar and oil. Other times a vegetable is simply blanched in salted water, cut into strips, combined with mayonnaise and served warm as the ever popular more Europeanized composed salad.
