Fresh vegetables are enthusiastically consumed by Ukrainian people. Ukrainian vegetable cookery is very similar to many other cuisines, with the only differences being in the final finishes and garnishes or in the sauces used. Fresh spring vegetables like greens are usually eaten raw in salads or shredded and added to soups. A drizzle of browned butter or a scattering of browned buttered crumbs is the most traditional way of garnishing cooked vegetable dishes. Constituting a large part of the Ukrainian diet are stuffed vegetables, usually with stuffing made of grain or meat or a combination of both, served very simply with a splash of cream or a sprinkling of chopped fresh herbs or chopped salt pork.
