Large parts of the world clearly love the intensity of flavors that come wrapped in compact, edible packages and Ukraine is no exception. Plump filled dumplings called varenyky are a Ukrainian staple and there must be as many different kinds as there are stars in the sky. Similar to the Polish “pierogi,” varenyky are half-moon shaped versions of ravioli with the most popular savory fillings being potato, cabbage, and cheese. Sweet filling favorites include sweetened sour cherries, strawberries, and blueberries. Varenyky are traditionally boiled, but they can also be fried in unsalted butter or oil. Usually two or more toppings are suggested for variety: sour cream, buttery fried onions, or pork or bacon cracklings. If varenyky have a sweet filling, serve sour cream sweetened with a drizzle of honey on the side, or a dollop of whipped cream on top. A splash of cream or fruit juice and a dusting of confectioners’ sugar are quite delicious and acceptable, too.
