I eat a lot of vegetables and encourage my clients to do the same. I try to have six portions of different veg a day, which works out at 2-3 portions per meal (yes, even at breakfast). They’re sources of fibre, vitamins, minerals and beneficial phytonutrients but are relatively low in energy density. They are fundamentally important to building a healthy, balanced diet. Plus, I genuinely enjoy eating them, and love how much more energetic and nourished my body feels when I eat lots. But, I know that preparing lots of veg can be time-consuming. As a result, I don’t make specific vegetable dishes or recipes much of the time – often it is just a very quick, almost-instant side instead.
