Remember that Mutton must never be fried. You will hear of Mutton Chops Breaded, and Mutton Chops en Papillotte, in imitation of the ways of cooking Veal Chops, but the Creoles very wisely and very sensibly refrain from cooking Mutton in any other ways than those given in this book. No good Creole will eat a fried Mutton Chop.
