Chervil is an aromatic plant, resembling Parsley, and much used for seasonings, especially in Oyster Soups. It is also considered a delightful salad herb, and is often cut and mixed between lettuce, and served as a salad. It is found in small quantities, chopped, in nearly all salads prepared to suit the taste of epicures. It is a plant little known in the North, but in this section there is scarcely a garden in which it is not found. It is especially used by the Creoles as a flavoring for breakfast salads, a few leaves imparting a delightful flavor.
