This Vegetable is used in making soup purees or vegetable purees, and is also prepared in the same manner as cauliflower. The finest variety, the “Early White Vienna, ” is the only variety planted and sold in New Orleans. It is an excellent table Vegetable, very popular among the Italian and other European populations of the city especially, and very largely cultivated.
