Salsify, or Oyster Plant

All recipes given for cooking Parsnips may be applied to Salsify, which, by the way, is considered the most delicate of the two, both belonging to the same order. Salsify partakes somewhat of the flavor of oysters, hence the name “Oyster Plant.”
