Turnips are cheap in New Orleans, and many delightful dishes may be made with them, if properly prepared. Turnip tops also make good, substantial and palatable home dishes that none should disdain. The Creoles, who have applied the art of cooking to the most humble even of the Vegetable kingdom, have learned to so prepare the Turnip tops as to make them a welcome dish on the most exclusive tables.

Turnips are largely used, like the Tomato and Onion, though not to such an extent in seasoning food substances. They are indispensable with the Pot-au-Feu, the Bouillon, or the well-made Consomme.
