Mexico is our family’s favorite destination to visit. We have been there nearly a dozen times, and each time we return home a few pounds heavier and with a few more unique recipes.
On our first trip to Mexico in 1991, I was underwhelmed by Mexican cuisine. While my family loved Mexican food, it took me a long time to warm up to it. I was not at all impressed with the smell, taste, or look of the food. In a somewhat bizarre turn of events, fast-forward to 2009 and I found myself fully in love with Mexican food. Perhaps my palate and sense of adventure had evolved over those 18 years.
