It is possible to cook almost every recipe in this book with ingredients purchased at your local supermarket and, for those that are problematic, substitutions are recommended. However, a wider range of authentic ingredients may be found by visiting Hispanic, Southeast Asian or Chinese markets. (The best results are always obtained by befriending enlightened purveyors and, when necessary, gently urging them to greater efforts on your behalf.) Of course, if you have the acquaintanceship of a Pacific Islander, ask them where they shop.
