Choice pork is pink in color interlarded with pure white fat. All cuts of pork are tender. Pork is juicier when it is cooked slowly for a long time than if cooked rapidly. Rapid cooking drives off the fat that contains much of the flavor of pork. Pork should always be cooked to the well-done stage.
