All good cooking depends for its excellence on the quality of its sauces. A sauce by its special flavor or texture must complement and enhance the food with which it is served. Polish cuisine makes many and varied sauces, carefully seasoned with herbs grown in the garden and strengthened with stock and bones. The "sosjerka," sauce boat, is an important vessel on the Polish table. We list below only some of the simplest sauces.
