Choice of Polish desserts is determined by the time of the year and the heartiness of the meal. A light meal is ended with a heavier dessert; a heavy meal ends with a liqhter dessert. Apple pie is unknown. Ice cream is served at very important parties.

In summer, desserts consist of fruits as they come into season. Every farm yard has its own orchard. After the first World War, independent Poland decreed that boulevards in the developing small towns be planted with cherry trees.

The fruit is served fresh with cheeses or cooked into compotes and served cold. Sometimes several fruits are combined. Fruit is a popular topping and filling for pastries. It forms the base of many gelatine desserts.
