Many types of cream are available, which vary in richness and fat content, so there really is no excuse not to include some in your cooking or eating. American half-and-half contains 10-12 percent milk fat, while light cream (also called coffee or table cream) and sour cream have about 20 percent. Whipping cream (also called light whipping cream) contains 30-36 percent fat; heavy cream (also called heavy whipping cream) has 36-40 percent. Only creams with a higher fat content, above 35 percent, can be whipped or frozen. British clotted cream, with 55 percent fat, is the richest cream of all.
