One almost never sees recipes for eels in modern cookbooks, which is very sad when you think that at one time eels, being so cheap, were extremely popular with the less well off. Eels were part of everyday fare as far back as the thirteenth century. Shops selling jellied eels and eel pie were once a very common sight in London, but, alas, they have now almost completely disappeared. Eels were used in a festive dish traditionally eaten on Christmas Eve, and were enjoyed at the beginning of a wedding feast, when they were cut into elegant fillets.
