As a child of about 8 or 9, I remember stating that when I was a grown-up I would have a leg of lamb a day and a new comic to go with it. Lamb was my favorite meal, apart from a chicken’s drumstick. We lived in Rye in Kent then, and had the most delicious lamb that was grazed on the Romney Marshes, good salt flats which give a distinctive flavor to the meat. Lamb like this is much prized by the French, who have their own agneau pré-salé, grazed on the northern French coastal grasslands, as well as agneau de Sisteron, from the coastal part of the Médoc.
