The fifth taste, umami, in a sense originates from a seaweed called kombu. It’s the seaweed that is used to flavor dashi, the Japanese soup stock whence umami derives. Seaweed is high in flavor and minerals such as iodine. If you buy the dried stuff for your pantry, it never goes off.
