Gluten-free (GF) bread crumbs sold at grocery stores are often not much more than rice flour or corn meal, thus lacking the “aerating” properties of wheat-based bread. I wasn’t impressed with the results I had when using these store-bought GF bread crumbs. There are some newer products out there, made from nuts or seeds, and they can be used in veggie burgers, though because they don’t really absorb liquid the same way that bread does, they can sometimes result in a dense and heavy burger. For best results, I find that grinding and toasting crumbs from store-bought gluten-free breads is your best bet (just follow the instructions). Homemade gluten-free bread crumbs can be substituted in any of the recipes here that call for bread crumbs.
