If you can’t find Greek-style yogurt, it’s very easy to drain plain yogurt yourself in order to achieve the thickness that is the hallmark of the Greek style. Some yogurts have added gelatins and emulsifiers that prevent the whey from separating; you’ll need to make sure to use a yogurt that does not include these. Stir the yogurt until smooth. Line a sieve or colander with a triple layer of cheesecloth, then transfer the yogurt in it. Allow to drain for 2 to 4 hours, until desired thickness is reached. You can even make yogurt cheese by tying the cheesecloth into a little satchel hung over a wooden spoon, allowing the yogurt to drain into a bowl overnight in the refrigerator.
