If you have a kind heart, it’s both a blessing and a curse to be at the top of the food chain. We have access to a wide variety of animal proteins, and I honor and respect those animals for making us stronger and healthier. Factory farming damages the environment and produces animals that are not optimally healthy, which means they also make us less healthy. Finances are always a concern, so I don’t specify organic, grass-fed, pastured, wild-caught, or free-range protein in my recipes, but I do encourage you to buy the highest quality protein you can afford. If you can’t invest in grass-fed meats, buy the leanest cuts you can find, remove excess fat before cooking, and drain the fat after cooking.
