In most cases, my recipes instruct you to mix seasonings into raw meat by hand; this is primarily to save time. To make meatballs and sausages tenderer, blend the meat and seasonings in a food processor or mixer instead of by hand.
For stovetop cooking, I usually recommend a wooden spoon because it’s versatile, durable, the handle doesn’t (usually) get hot, and it won’t scratch non-stick cookware.
