Depending on one’s definition of the dish, salads can conjure up a multitude of noticeably dissimilar images. The salads appearing in this chapter are meal-sized, stick-to-your-ribs delights, celebrating the symphony of texture, flavors, temperatures, and colors that are my requisite features for a great bowl. While some recipes do have a more traditional base of peppery lettuces, crisp greens that burst with water at first bite, and loud, bitter leaves, others skip the lettuce altogether, replacing these routine bases with delicate grains, slurpable pastas, and creamy beans.
