One of my favourite things about soups (other than how delicious they are) is that none of your nutrients are lost. Instead of boiling vegetables and allowing the nutrients to leach into the water which is then thrown out, everything is contained in the pot. This is why soup is always great when you’re sick, and also what makes it so tasty. Who doesn’t crave a generous helping of chicken soup when they are feeling under the weather?
As a general rule, soups get better the longer you cook them – the flavours deepen and develop, leaving you with a fulfilling bowl of goodness. At the same time you can throw a delicious soup together relatively quickly.
