The tradition of baking is truly global and in the last few hundred years at least, cookery books have played a major part in spreading the influence of different cultures’ baking traditions; now information is freely exchanged across the world online, allowing cake traditions to continue to evolve. For instance, you no longer need to travel to Macau to enjoy their custard tarts or fly to Greece to taste Baklava. I have tried to reflect some of the scope of these global recipes in the choices I’ve included in my book.
