There’s a certain order to how you build up your hot pot. You start with the things that add flavor—hearty mushrooms, tomatoes, thicker-cut vegetables. Then you go with meat, since you’ll probably be hungry. Once you get more comfortable, toss in the leafy veggies. And as you start getting full, make yourself some noodles and crack an egg into the flavorful broth for a bowl of noodles before you roll yourself to bed.
