It feels like every day, someone chats me up about opening a restaurant of their own. Typically, these are cool, fashionable people with really elaborate and interesting ideas but zero restaurant experience. So for all of you with restaurant dreams, here are five very important things to know before diving in:
1 Your body will hate you. You should know every little detail of how your business runs, and be able to do it, too, which means you’ll be working harder and longer than any of your employees. Your feet will hurt and your back will be sore, your joints will be achy and creaky, and you’ll feel ten years older when you wake up in the morning. Slowly, the pain will become your new norm.
