While there has been a push to modernize the city, there has also been an effort to preserve our history. This square just inside the eastern gate of the city walls is one of the latter efforts. The food center, meant to re-create the look and feel of a small historical village, houses shops and stalls dedicated to serving Shaanxi delicacies. It’s here you might find traditional versions of Mt. Qi Pork Noodles (岐山臊子面) and Biang-Biang noodles, as well as more obscure dishes like cold buckwheat noodles dressed in vinegar and mustard oil (荞面凉饸饹), liang pi-like Qin Zhen-style rice “mipi” cold noodles (秦镇米皮), and Shanbei jianbing (陕北煎 饼), made with spongey buckwheat crepes. You can also take part in the spectacle of drinking some light wine that’s “so good that it’ll make you smash your bowl.” Literally, you’re supposed to drink the wine and smash the bowl once you’re done.
