My first cooking experiences were learnt first-hand from my mother. Her kitchen was the heart of our home, where she would cook for our large family every day. I was the youngest and spent a lot of time with her, observing her cooking and learning her techniques. It was a very basic set-up at home. My mother would say, “Rohit, whatever you cook, if you cook with your heart and soul then you don’t need any special ingredients.” Her dips and pickles were amazing, as was her paratha, cooked on the griddle, which she would serve just with homemade butter. That’s all you really need with paratha, along with a cup of chai.
