Leon West (1946–2020) started his career as a busboy/dishwasher in 1962 in his hometown of Boston. He went on to be the first executive chef of New Orleans’s Ernest N. Morial Convention Center. He was a longtime mentor to upcoming chefs on the New Orleans culinary scene, and in 2017 was inducted into the African American Chefs Hall of Fame.
