For over 20 years Lourdes Poveda worked as an executive in a multinational company, combining this activity while studying cuisine, her true vocation.She studied Cuisine at Le Cordon Bleu Madrid and, after completing her training, she was able to work at two important establishments in the capital: Alabaster and Horcher. Her studies did not end there, as sometime later she earned the Basic Certificate in Pastry.
Along with her sommelier husband Carlos Romero, she embarked on an adventure in opening her own establishment in Madrid, Las Carboneras de Lu, converting old coalhouses dating back to 1902 into a restaurant offering traditional Spanish cuisine with touches of French influence. At the same time, she continued to take courses at Le Cordon Bleu and got her Intermediate Pastry Certificate. Her intention is to continue studying and eventually obtain the widely recognised Grand Diplôme.
