Jean-Louis Palladin (1946-2001) was a French-born chef who won two Michelin stars for his restaurant in Gascony, Tables Des Cordeliers. He moved to Washington DC in 1979 to open a restaurant at the Watergate Hotel, and was known for working with local producers to source the best ingredients.
