Michel Bras is an innovative French chef from Aubrac, France. Bras’ career never took him far from his home town. He trained at his family’s restaurant hotel/restaurant, Lou Mazuc, which he inherited at the age of 33. Bras’ innovative style and adherence to a natural style of cooking helped the restaurant secure two Michelin stars. In 1992 he opened another restaurant, hotel restaurant Michel Bras, which seven years later eared a prestigious three Michelin stars. Bras, considered a “renaissance” chef, published his acclaimed classic cookbook, Essential Cuisine, in 2002. Since then he has authored a number of cookbooks, appeared on a DVD cooking series entitled, “Inventing Cuisine: Michel Bras”, and has also released his own custom knife and blade line with the Japanese brand KAI.
