Preheat the air fryer to 360°F for 5 minutes.
In a medium bowl, combine the chickpeas, olive oil, cheese, garlic powder, Italian seasoning, and a large pinch of salt.
Transfer the chickpeas to the fry basket and cook for 12 minutes. Stir and cook until crispy and golden, 3–5 minutes more. Depending on the amount of moisture, you may need to repeat this step in increments of 2–3 minutes.
Store in an airtight container for up to 5 days.
