Devil Sauce

Ingredients

  • 1 oz. butter, margarine or beef dripping
  • 1 oz. flour
  • ½ pt. good meat gravy
  • 1–2 tablesp. Worcester or other commercial sauce
  • 2 teasp. lemon juice
  • ¼ teasp. anchovy essence
  • 1 teasp. mixed mustard
  • ¼ teasp. pepper
  • ½ teasp. grated lemon rind
  • ½ teasp. chopped shallot
  • 1 teasp. chopped capers
  • ½ teasp. chilli vinegar
  • a very little cayenne pepper

Method

Make a brown sauce with the fat, flour and gravy. Add all the other ingredients to taste and simmer them together for 5–10 min.

Serve with fried or grilled beef, or mutton.
