Prepare and parboil the artichokes (about 15 min.). Cut them into slices ½ in. thick and season them well. Make the batter, dip in the slices of artichokes and fry in hot fat, at 340° F. until golden brown (5–7 min.), turning them during cooking. Drain well and serve very hot with fried parsley.
