Make the batter. Spread the slices of bread and butter well with jam. Make into sandwiches and cut into four. Dip into the batter and fry in fat which is at least 1 in. deep and which is just showing signs of smoking or hazing. Turn and fry to a golden brown. Drain well. Dredge with plenty of castor su
