  • 1 lb. large gooseberries
  • fat for frying


Sift together the flour and salt. Mix to a stiff batter with the milk, water and egg yolks. Beat well and leave to stand for at least ½ hr.

Top, tail, wash and dry the gooseberries. Stiffly whisk the egg whites and stir into the batter, then add the gooseberries. Take up 2–3 gooseberries at a time, using a greased tablespoon, and lower them into t
