Here is a tangy, refreshing and easily made soup for lazy summer meals.


  • 1 fresh red chilli
  • 900 ml (½ pints) chicken or vegetable stock</


Cut the chilli open lengthways under cold running water and remove the seeds and stem, then chop the flesh finely. Bring the chicken or vegetable stock to the boil in a saucepan, then add the courgettes and the chilli. Cover the pan and simmer for just about three minutes, or until the courgettes are slightly softened but still a bright green. Remove the pan from the heat and, using a slotted s
