Here is a tangy, refreshing and easily made soup for lazy summer meals.

Ingredients

  • 1 fresh red chilli
  • 900 ml (½ pints) chicken or vegetable stock</

Method

Cut the chilli open lengthways under cold running water and remove the seeds and stem, then chop the flesh finely. Bring the chicken or vegetable stock to the boil in a saucepan, then add the courgettes and the chilli.
