This is reminiscent of traditional vegetarian fare and is perfect for a homely informal meal.


For the Pastry

  • 175g (6oz) plain flour
  • 1 teaspoon salt


To make the pastry, sift the flour and salt into a bowl and stir in the ground rice. Put the butter and water in a saucepan and melt the butter gently. Then pour the butter into the flour mixture, stirring it in with a wooden spoon to form a warm dough. Press this dough evenly over the base and sides of a 23cm (9-inch) loose-bottomed flan tin, bringing it up slightly above the rim of the tin. R
