Deep-Fried Feta Cheese and Mushrooms in Beer and Caraway Batter

You can use this lovely batter for frying all sorts of raw vegetables to make light crisp fritters, which can then be served either as a first course or as an accompaniment to a main dish. The beer makes the batter lighter and crispier.

Ingredients

  • 125g (4oz) self-raising flour
  • 1 teaspoon salt

Method

Sift the flour, salt and chilli powder into a food processor. Then add the caraway seeds and the egg. Whizz the mixture briefly together; then gradually add the beer, whizzing between each addition. Pour the batter into a large bowl and leave it to one side for at least 20 minutes.
