This delicious crispy and soft roll, with a mixture of Italian cheeses, is easy to make and excellent for a light lunch or supper. If you prefer, you can prepare it several hours in advance, keep it in the refrigerator and then simply pop it in the oven to cook it fresh. If you can get the sun-dried tomatoes sold in jars of oil, they are nice and soft, and their flavour is wonderful with rich, strong cheeses, such as Gorgonzola.
